Meet Nigel Hughes – Our Red Seal Chef!

Many of the questions we are asked about Royal Brock Retirement are about our food. We’ve been posting our menus on the website and on Facebook to show you how tasty our meals are, and now it’s time to meet the person who creates, shapes and plans the menus for our residents, their families and friends.

Nigel Hughes is our certified Red Seal Chef. Being a Red Seal chef took Nigel over 8,000 hours of work experience, a written exam and formal apprenticeships during his career. Nigel started working as a cook 17 years ago, and has been certified since 2008.

Running the kitchen at Royal Brock retirement involves meeting diverse expectations. We need to make sure all nutritional needs are met and we must take special care to ensure that dietary needs of our residents are followed. Some residents have individual needs. Since we are an active retirement community, we make sure your caloric intake will fuel your body in the proper way. We manage salt intake and portion size in a way that ensures you’re never too full and always satisfied.

Nigel believes in comfort food with a twist. He takes traditional recipes and applies his creative flair to each meal, by perhaps adding herbs to crusted pork loin, adding fruits to salads or creating a lasagna with chicken and a garlic parmesan sauce. He also listens to the residents and tweaks menu items regularly to ensure a diverse selection of meals.

His passion opens the window of tasting while keeping the comfort of the food we all grew up eating and preparing throughout our life.

As Nigel says, ‘My mom told me when I was a kid to stop playing with my food. When I got older, I decided to still play with my food, have fun doing it, create new dishes, and even get paid for it!’

Nigel is constantly working on ways to use local Brockville produce and suppliers. So that lettuce you’re eating may have come from your friends at a local farm!
