A Magical Night Under the Northern Lights – November Fine Dining at Royal Brock

November’s Fine Dining event at Royal Brock Retirement was nothing short of spectacular as residents gathered for an enchanting evening inspired by the natural wonder of the Aurora Borealis. Our team worked hard to bring the magic of the Northern Lights indoors, and the results were breathtaking.

Creativity in Bloom

In the days leading up to the event, residents enjoyed a lineup of fun and immersive activities designed to set the tone for our celestial theme.

  • Northern Lights trivia sparked friendly competition and fascinating conversations.

  • A virtual Armchair Travel adventure transported everyone to the Arctic Circle, where shimmering colors danced across the night sky.

  • And perhaps the highlight—our residents came together to create the beautiful handmade centerpieces that decorated each table. Their attention to detail and artistic eye truly shone. We are so proud of the incredible talent we have right here at Royal Brock!

A Taste of the Northern Sky

No fine dining experience is complete without an unforgettable menu, and Chef delivered a feast worthy of the theme. Each dish was crafted with care, elegance, and a touch of indulgence.


✨ Appetizer

Fresh Bruschetta on Homemade Bread with Goat Cheese
Finely diced tomatoes blended with red onions, garlic, and olive oil, served on slices of fresh homemade bread. Each bite was topped with a delicate crumble of goat cheese and finished with a drizzle of balsamic reduction—light, fresh, and full of flavor.


✨ Entrees

Residents chose between two richly comforting entrées:

Chicken Madeira
A tender 5oz Chicken Supreme, beautifully seared and braised in a luscious Madeira wine sauce with sautéed mushrooms and onions. Garnished with parmesan cheese and Italian parsley, it quickly became a crowd favorite.

Or

Lamb Moussaka
Roasted slices of eggplant layered with seasoned ground lamb and topped with velvety béchamel sauce. This savory, aromatic dish transported diners to the Mediterranean with every forkful.


✨ Accompaniments

Green Bean Almandine
A timeless French side featuring crisp green beans tossed with garlic, fresh lemon juice, and toasted almonds for a bright, nutty flavor.

Whipped Yukon Gold Potatoes
Smooth, buttery, and irresistibly creamy—made with Yukon Gold potatoes whipped together with 35% cream and butter.


✨ Dessert

Hello Dolly Bars
A sweet, nostalgic finish to the night: a classic layered dessert bar featuring chocolate chips, coconut, and chopped nuts. Rich, chewy, and perfectly satisfying.


An Evening Brought to Life with Music

After dinner, residents were treated to a wonderful performance by Tom Valiquette, whose musical talent brought warmth and energy to the room. His entertainment was the perfect finale to an already magical evening, filling the space with smiles, singing along, and a truly joyful atmosphere.
